Cranberry Relish Salad
From the kitchen of Mom Glick
Ingredients
- 2 cups boiling water
- 1 large package cherry Jello
- 2 oranges – grated rind of one
- 1 20 oz can of crushed pineapple
- 2 cups cranberries (1 bag)
- 1 ½ sugar
- ¾ cup nuts (walnuts) optional
- Dissolve Jello in 2 cups boiling water.
- Add sugar and orange rind.
- Stir until dissolved.
- Drain pineapple juice into a 1 cup measuring cup.
- Add water to fill cup.
- Add to Jello.
- Chill until partly set.
- Put cranberries and peeled oranges thru food chopper or processor.
- Combine all ingredients — pour into oiled mold or serving dish.
- Refrigerate.
- NOTE: Note – Linda uses raspberry Jello instead of cherry.
